Blarney Stones- St. Patricks Day!

Hey everyone! Our neighbor gave us this awesome dessert called "blarney stones" the year we moved here. So last year (and this year) I've decided to make them! Their crazy good! While they're pretty messy, and take a bit to make they're well worth it!


So heres an added bonus:
Blarney Stone Recipe!
Blarney stones (batter):
Heat the oven to 350 deg.
4 Eggs
1-3/4 cup of sugar
1 teaspoon of vanilla extract
1-3/4 cup of all purpose flour
3 teaspoons of baking powder
1/2 teaspoon of salt
1 cup of milk
1/4 cup of butter (melted) FYI: Let the butter cool before putting it with the batter! Otherwise it will cook the eggs! YIKES!

In a large mixing bowl, beat the eggs, sugar and vanilla until its a thick and lemon colored (about 4 min.) In another bowl, combine the flour, baking powder and salt; add to to egg mixture. Beat on low speed(or by hand) just until combined. Beat in milk and butter. Pour into a greased 13in.X 9in. baking pan. Cook for 30-35 minutes or until a toothpick inserted near the center comes out clean. After its cooked, let it cool and cut into squares. Cover and freeze over night.

FROSTING:
2 pounds of confectioner's sugar (about 7 1/2 cups)
2/3  cup of milk
2 teaspoons of vanilla extract
1/8 teaspoon of salt
You'll also need 6 cups of finely chopped peanuts for later.
For frosting, in large mixing bowl, beat the confetioner's sugar,milk,vanilla, and salt until smooth. Frost the top and sides of the frozen cake squares; roll in peanuts. Place on wire rack (or in a covered pan) for later! ENJOY! YIELDS: about 2 dozen
